I've read some good reviews of Borovets but my experience there wasn't a good one.
The hotel was dirty (The Rila). We had a small studio in the hotel itself. The food was terrible. Everything was full of calories. You could get plenty of bread with no butter (it was cheesey stuff), and loads of pasta. Every meal brought yet another dish of the Bulgarian equivalent of spaghetti bolognese. They added the left overs from the previous day to it. it got to be a game of 'guess what's in the spaghetti today?'
You didn't need to go hungry if you would eat all this stodgy food.
There was hardly any snow low down and we had to trek carrying all our gear to the lift and go up to the top of the mountain. This wasn't suitable for learners either.
Prices were low but they varied according to the place, who served you and whether they liked you. A coffee in the same place, same time of day, ordered by two different people varied by as much as double the price.
This was more like a prison camp than a ski resort.
I know lots of people have rated it highly and perhaps I was unlucky. I'm told that the quality of food in Bulgaria depends on what is available in the country.

Advantages: brilliant skiing, alpine village prettiness, great English speaking ski school, Close to Italy and other resorts. Disadvantages: Not to great for veggies and nightlife fairly low key.
