First and foremast we stayed all inclusive at the CrownParadise which I would completely recommend (make sure you are in the new building and pay the extra for the upgraded room with jacuzzi etc). Great facilities, several restaurants, right on a beautiful beach, great pools, good entertainment, dive centre, brilliant staff, everything perfectamundo.
Cancun as a place is really good fun, very safe, inexpensive and it's easy to take trips out to the ruins if you like that kind of thing or to go to places like Cozumel (which is beaitful with great shopping).
The main reasons I went there were firstly for a Xmas break with my fiancee and secondly for Scuba diving. The diving was amazing, especially in Cozumel although I found the dive masters etc (PADI) where pretty reckless and too aggressive (in diving style that is; not physically). I'm an advanced level diver and I had a very bad experience on a wreck dive in Cancun because the instructors ignored basic safety / dive protacol. If you dive, think of your own safety first, remember your training (even if they don't) and don't do anything you feel uncomfortable with. Don't get me wrong, they are good diver masters / instructors but they can be lax on equipment, rules etc. Unfortunately, didn't see any sharks which I happen to love diving with and no turtles but I didn't expect that anyway, I go to The Maldives for that. Lots of eagle rays though and baracuda.
I have to say that the locals are very friendly, good people and I would recommend the Pirate Ship evening excursion (cheesy but loads of fun) and you must go to Cozumel to swim with the dolphins (which are in open water and not in an aquarium which I don't agree with).
Money, well I could never figure it out because you change pounds into American dollars and then Dollars into Pesos so you get lost and have to keep paying commission. Not the safest thing but I would recommend taking more dollar currency than travllers cheques. They are sticklers in the airport on departure for weight, they search all of the backs in great detail and you have to pay an obligatory departure tax which was about $40US from memory.
Buses there (Cancun) are amazing and very cheap (about 12p for unlimited journey). No exaggeration...you never wait more than 1 minute for a bus day or night. Don't bother with taxis (but if you do agree a fare in advance).
Some of the hotels / resorts aren't as good I suppose so look online like we did for peoples reveiews who have stayed there.
Long flight for those who don't like long flights (whereas me; I love them...I just drink brandy and watch the movies).
Great place to buy Cuban ciagrs there, the Monte Cristos are very very fresh.
Alcohol and cigarettes...not that much cheaper and you can only bring something like 400 fags back at the most anyway which is a bummer. Some good deals on designer clothes though.
Anyway, bottom line is that I have been all over the world, stayed in some fabulous hotels and resorts and Cancun was probably the most fun holiday I have ever had overall. Not the most luxurious or the most stunnningly beautiful compared to some places (although it is lovely) but overall a great holiday.
Why spend the same money going to the Med or Spain when you can go to Cancun? It doesn't make sense to me and years ago I decided I would never holiday in Europe again.
I've stayed at this hotel twice .. people who stay here tend to say they enjoyed Cancun more than those who stay elsewhere
Huge cocktails in the rooftop jacuzzi at 1am ... unbeatable !! And that 6 star restaurant ...
I cant recommed this hotel enough . did they build the champagne tower in the atrium while you were there ?

I won a holiday to Mexico with the AA (yes, won!) and stayed in Cancun for a couple of days. It was great! Unfortunately it was before I had taken up scuba diving so I didn't get to see the underwater sights. It is yet another place we are considering going, although I suffered dreadful jet lag when I got back that lasted for over two weeks - I thought I had some dreadful disease.

Advantages: 5* beach - when I went we even saw huge turtles coming out of the ocean in the night-time - amazing. Disadvantages: Can be expensive - we paid £1200 for 2 people for 2 weeks on a late deal 4/5 star all inclusive hotel.
