I went to Cancun in April about 6 months after Hurricane Wilma. I was surprised to still see some evidence of the damage caused by the hurricane but I guess there are an awful lot of smaller businesses that couldn't afford to re-open. It didn't have a bad affect on my trip though. Luckily the beach 'regneration' programme had finished (the beach had been completely washed away in the hurricane) and there was now plenty of beach. A few hotels (3 or 4) had been completely destroyed or gutted since the hurricane and were still under (re)construction. I was fortunate to visit several of the hotels on the main strip (I was working with a photographer from a travel company) and many had made the most of the chance to renovate after the damage caused with new pools, newly decorated rooms and the sort of amenities you get in top hotels around the Caribbean (e.g. hammocks on balconies, beds on the beach). Some general comments about Cancun - not a great deal to do outside of the hotels (the main strip is mainly hotels, not many restaurants, although 2 new shopping centres), amazing blue-coloured sea, lots of police checking for speeding, not alot of what I would consider real 'Mexican' culture. I had the chance to visit Puerta Aventuras a little way down the coast and much preferred it there (low-rise, lots of little boutiquey shops, a bit more of a backpacker feel). Locals very friendly (if a bit pushy in the souvenir shops), bit disappointed to see cock-fighting 'demonstration' as part of our evening entertainment at the hotel and also 'have your photo taken with parrott / sloth. In summary - very nice place, but personally not my cup of tea.
