I've been to China twice now to teach and have had some really great times out there.
The food is much better than your local take-away, the people are very warm and friendly and very very helpful and always make you feel welcome.
If you're looking to teach in China the students are far better behaved up in the North of the country, Dalian in particular is a great place to go and is quite rightly called the Hong Kong of the North.
It's also very cheap with many great restaurants.
Some dishes you may want to try are 'zhu pa fan' which is a piece of Pork with rice and an Aubergine sauce, bao zhi and jiao zhi, both dumplins and mu shu rou which is Pork, Egg and Sea Cucumber.
Further to peoples comments (thanks for you help guys) here's some more.
I did a lot of sightseeing whilst there and can recommed the Great Wall at BA DA LING this place is quite remote and not oft visited by tourists, you should find a Bus from Beijing City Centre to MU LING COUNTY and there take a Mini Bus to BA DA LING, avoid the Taxi's one tried to charge me 8 times the Bus Fare!
TIAN TAN Park is also excellent, It's a great place to just stroll around and Chill out.
The Zoo is best avoided, it's quite depressing seeing Animals in dull grey Conrete pens.
