I travelled from St Pancras, London to Gare du Nord, Paris with my mother who is in her 70's. It is a very efficient service but there is room for improvement in some areas. We got good price tickets by booking early.
Firstly, printing tickets out at St Pancras was easy, and there was someone there to help if you were unsure. Check-in and security were very efficient, far more so than at an airport. To get to the rail platform there was a flat escalator and trolleys if needed, which is fine. First downside is that if you have trouble walking and happen to be in the end carriage it is quite a walk. There is no-one there to help you lift your bags onto the train which is quite high up, again ok if you are young and fit, but not so easy if you are elderly. We travelled in standard class, and found that baggage storage is quite difficult and in short supply. You can store small cases overhead, but again if you are elderly it would be difficult to lift your bags above your head (unless like us you had helpful passengers).
The seating itself is comfortable and the journey was quite smooth.
On arrival at Gare du Nord, it was a bit of a scramble for the bags, as ours were stuck under piles of others. Again being in the last carriage it was a long walk from the train to the terminal building.
We left the station and queued outside for a taxi -- Its a long queue and not undercover, so pray for good weather. Although it was a long queue it did move quite quickly. We waited about 20 mins in all.
On return from the station, there is a few eating places and a few shops, and sufficient seating. The signage to the eurostar check in was hard to find initially and although we asked a station worker, they just pointed a finger but still took a while to find it.
All in all a very efficient service, but main criticism is for elderly or infirm baggage assistance is lacking.

Fair enough review, and I think your criticisms of the baggage facilities are apt, but it still a vastly better experience than flying. Incidentally, if instead of joining the always lengthy queue off at the side of Gare du Nord you just go out of the front you can almost always find a cab without waiting.
