I recently stayed in a great little 1 star hotel in Venice for two nights. The hotel was called the Locanda Fiorita. It is about 5 mins walk from St Marcs square (THE hub of Venice) and is easily accessible from the airport from waterbus.
We arrived very late, (1am ish), and it appeared that the front desk is manned 24 hours a day as there was someone there again on the last day when we left particularly early.
The rooms are large and comfortable and I think ours was a bit larger than most as we also had a lounge, (when do you get a lounge in a hotel room of any calibre let alone a 1 star!). The room was quite quiet with occasionally a bit of noise, and all the amenities you require (i.e. bathroom / soaps towels / wardobe / BED!) plus a TV above the bed with about 50 channels.
Breakfast was included and we were given vouchers for eating at a nearby café. Breakfast was fresh croissants, jams and choice of freshly brewed Italian coffee - a necessary kick-start after a short nights sleep.
I booked the room through www.guestinitaly.com, which is a great little site that is straightforward and seems to have a good range of hotels on offer. Unfortunately they don't do interactive bookings (email only) but we got our first choice, and they were very prompt with replies to my questions and booking request so I cannot fault them. The only thing I would say is that they need to turn their caps lock off on their emails - AS EMAILS LIKE THIS ARE ANNOYING TO READ..

Our room cost us 21,000 ITL a night or around 70 GBP, which was very good considering we stayed over Easter. They say that they can offer discounts of around 30% cheaper than booking with the hotels directly in some cases. We paid the same as the Hotels website rates, and charged 60,000 (20 GBP - which is a fixed charge for an indefinite number of nights or rooms) which for us worked out to be about 2.5 GBP per head each per night. They gave us the website for the hotel after we booked - which had details of how to get around the maze of streets in Venice
Of course next time I would probably book direct with the Hotel, , (http://www.locandafiorita.com/ ) but the guest in Italy site is a very handy little site to know if you want other good accommodation in Italy.
