One of the city's finest restaurants is a high-profile, cellar restaurant whose wood panels and carpeting contrast with its terra-cotta bricks. It's 19 steps down from the street, in the high-ceilinged cellar of a medieval building once used for the storage of fish and the salts to preserve them. The delicate, creative menu items change with the seasons. Among delectable dishes are a terrine of deliberately undercooked foie gras, served with figs; cream of watercress soup with warm oysters; magret of duckling served with ginger and crushed apples; roasted shoulder of rabbit served in a stewpot, with polenta and baby vegetables; filet of baked red snapper with spider-crab sauce, and filet of curried duck breast with Asian-style vegetables. To end your meal, try a stir-fry of mandarin oranges flavored with balsamic vinegar, or saffron-flavored sabayon with ice cream made from unpasteurized milk.
...Toulouse is a wonderful City that is often missed by the traveller. It is used by many skiers during the winter as a transit point for the Pyrenees or Andora.
The city is a true contrast between ancient and modern. The ancient being the old town full of wonderful museums and quaint resturaunts. The modern being the new developments associated with the new industries moving into Toulouse mainly attracted by the presence of the Airbus Industrie facility.
Toulouse is now one of the major centres of the European Aircraft Industry and as a result has quite a cosmopolitan flavour.
I can highly recommend it as European destination for a short (or long) break....

Advantages: very pretty, 'different', good nightlife Disadvantages: expensive, locals not too friendly
...off 'La Capitole' (the main square), where we went for many a 'pomme saladaise' (basically potato salad but being French they garnish it with a bit of parsley and hey presto you have a posh French dish! The local speciality I thought was disgusting but then I didn't like many of the ingredients - it is of course cassoulet - a cumbersome mixture of Toulouse sausages with chickpeas and some other gunk.
Most of the bars I went to are probably different now, but there are lots of good ones centred round the streets of 'La Capitole'. I especially remember 'Le cafe des Artistes' - very popular with Erasmus students, relatively cheap and with a good view of the river if you sit outside. I've been told that's still doing well...
Things to see include: the old monastry, lots of churches, museums etc but most of all Toulouse like so many places...

...Toulouse is a beautiful old city in the South of France that is sometimes overlooked by most travellers.
It has beautiful architecture, interesting museums, fantastic restaurants and a lovely large park right in the centre.
The people are friendly and helpful to tourists (in particular when using public transport – all the announcements are in French and my French isn’t that good, it takes me a while to understand it!!). Public transport into and around the city is fairly cheap (depends where you are travelling from), and reliable.
I would say that you could enjoy a city break in Toulouse of a couple of days, particularly in you where then travelling on the Dordogne or the Pyrennes....
