For anyone who has ever had a welsh tea in one of those little welsh cafes, you probably ate this.
12oz mixed dried fruit.
Three quarters of a pint of cold tea.
1 beaten egg.
3oz of melted butter
1lb self-raising flour
4oz sugar
A pinch of mixed spice
Soak the fruit in the tea overnight.
Add the beaten egg. Mix the flour,sugar and spice together and add the fruit,tea and egg mixture to form a wettish dough, stir with a wooden spoon.
Add the melted butter then bake on a flat tin at 350 f (gas4) for 1 and a half to 2 hours.
Cool and slice, eat with butter or on its own.
